Follow The Directions

01

Step

In a pot over medium heat, heat the oil. Add the chile peppers and garlic, cooking until golden and fragrant, about 2-3 minutes.

02

Step

Add the diced onion and cook until translucent, approximately 5-7 minutes.

03

Step

Stir in the cubed potatoes, ensuring they are well coated in the oil and spice mixture.

04

Step

Pour in the water, then season with chile pepper powder and salt. Bring to a boil, then reduce the heat to low and simmer until the potatoes are tender, about 10-15 minutes. Add more water if needed, maintaining a thick, gravy-like consistency.

05

Step

Reduce the heat to its lowest setting and gently stir in the grated fresh cheese until it melts evenly into the gravy, around 5 minutes.

06

Step

Garnish with a pinch of red pepper flakes before serving.

For a more authentic and spicier experience, increase the amount of fresh chiles to your preference.
Feel free to experiment with different types of cheese. A blend of cheddar and Monterey Jack works well.
Serve hot, either as a comforting soup or alongside a bed of steamed rice.
