In a medium-sized bowl, gently combine the mayonnaise, dill pickle, capers, lime juice, jalapeño pepper, and parsley. (5 minutes)

Serve chilled. The tartar sauce will keep in an airtight container in the refrigerator for up to 3 days.

For a smoother sauce, pulse the ingredients briefly in a food processor after mixing, but be careful not to over-process. You want to retain some texture.
If you don't have fresh parsley, 1/4 teaspoon of dried parsley can be substituted, but fresh is preferred for its brighter flavor.
Consider adding a small clove of minced garlic for an extra layer of savory depth.
Taste the jalapeno pepper before adding it, as their heat level can vary significantly. Adjust the amount accordingly to your preference.
For a creamier texture, substitute 1/4 cup of the mayonnaise with sour cream or Greek yogurt.
