Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans. (10 minutes)

In a large bowl, cream together the softened butter and 1 1/4 cups of granulated sugar until light and fluffy. Beat in 1 1/2 teaspoons of vanilla extract. (5 minutes)

Gradually add the dry ingredients to the butter mixture in three additions, alternating with the milk in two additions, beginning and ending with the flour. Mix until just combined. Do not overmix. (5 minutes)

In a clean mixing bowl, beat the egg whites until soft peaks form. Gradually add 1/2 cup of sugar, beating until stiff, glossy peaks form. (7 minutes)

Gently fold the meringue into the cake batter in two additions until just combined. Be careful not to deflate the egg whites. (3 minutes)

Divide the batter evenly among the prepared cake pans and spread evenly. (2 minutes)

Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean. (25-30 minutes)

Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely. (10 minutes)

To assemble the cake: Stir together 2 cups of Lady Baltimore Frosting, raisins, pecans, cherries, and 2 teaspoons of vanilla extract (or sherry if preferred). (5 minutes)

Place one cake layer on a serving plate and spread with half of the filling. Top with the second layer and spread with the remaining filling. Place the third layer on top. (5 minutes)

Frost the entire cake with the remaining Lady Baltimore Frosting. (10 minutes)

For a richer flavor, brown the butter before creaming it with the sugar.
To prevent the cake layers from sticking, line the bottoms of the cake pans with parchment paper rounds.
The Lady Baltimore Frosting can be made a day ahead and stored in the refrigerator.
If you prefer a less sweet cake, reduce the amount of sugar in the batter by 1/4 cup.
