Prepare Jars: Inspect ten 16-ounce jars for any cracks or rust, discarding any defective ones. Immerse the jars in simmering water to sterilize them until the relish is ready. Wash new, unused lids and rings in warm soapy water. (Approximately 15 minutes)

Combine Wet and Dry Ingredients: In a separate bowl, whisk together the sugar, white vinegar, water, mustard seeds, turmeric, and celery seeds until well combined. Pour this mixture over the drained vegetable mixture and stir to incorporate. (Approximately 5 minutes)

Cook the Relish: Transfer the entire mixture to a large pot. Bring to a boil over high heat, stirring occasionally to prevent sticking. (Approximately 10 minutes)

Boil and Thicken: Reduce heat slightly and boil for 5 to 10 minutes, or until the relish has thickened to your desired consistency. Stir frequently. (5-10 minutes)

Jar and Cool: Carefully transfer the hot relish to the sterilized jars, leaving 1/2 inch of headspace. Seal the jars tightly with the prepared lids and rings. Allow the jars to cool completely at room temperature. (Approximately 30 minutes)

For a spicier relish, add 1-2 finely chopped jalapeño peppers to the vegetable mixture before processing.
If you don't have green tomatoes, you can substitute with red tomatoes, but the flavor will be slightly different.
Be sure to sterilize your jars properly to ensure a safe and long-lasting product. You can also process the filled jars in a boiling water bath for 10 minutes for extra preservation.
