Follow The Directions

01

Step

Bring a large pot of lightly salted water to a boil. Add gnocchi and cook until they float to the top, about 2-4 minutes. Drain well and set aside.

02

Step

Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and garlic and cook, stirring occasionally, until softened and lightly golden, about 5 minutes. Add green bell pepper, red bell pepper, and Cubanelle peppers; cook, stirring occasionally, for 2 minutes.

03

Step

Pour in vegetable broth and diced tomatoes. Bring to a gentle boil, then reduce heat and simmer until peppers are tender, about 5 minutes.

04

Step

Stir in chopped basil and red pepper flakes; season generously with salt and pepper. Add cooked gnocchi and simmer until heated through, about 3-5 minutes.

05

Step

Ladle soup into bowls and sprinkle with Parmesan cheese and fresh basil leaves. Serve immediately.

For a richer flavor, consider using homemade gnocchi. Alternatively, store-bought gnocchi made with ricotta cheese adds a delightful creaminess.
Feel free to adjust the amount of red pepper flakes to your preferred level of spiciness. A pinch of smoked paprika can also enhance the depth of flavor.
For a heartier soup, add cooked Italian sausage or shredded chicken during the last few minutes of cooking.
This soup tastes even better the next day as the flavors meld together. Store leftovers in an airtight container in the refrigerator for up to 3 days.

This soup is a winner! I used fire-roasted tomatoes for a smoky flavor and it was incredible. Highly recommend!

My family loved this! It's so easy to make and it's a great way to use up leftover vegetables. I will definitely be making this again.

I tried this recipe and the soup turned out delicious. I would suggest adding a little more broth if you prefer a thinner consistency. Also, the red pepper flakes add a nice kick, but you can adjust the amount based on your preference.

This soup is fantastic! The gnocchi are so pillowy and the flavors are amazing. I added some sausage for extra protein.
