In a large bowl, whisk together the eggs, salt, and pepper until light and frothy. (2 minutes)

Melt 2 tablespoons of butter in a large skillet over medium-low heat. Pour in the egg mixture and gently cook, stirring occasionally with a spatula, until the eggs are set but still slightly moist. Remove from heat. (3-6 minutes)

Carefully slice the Hawaiian rolls horizontally, creating a top and bottom layer. Place the bottom halves in a greased 9x13-inch baking dish.

Layer half of the provolone cheese slices evenly over the rolls, followed by the scrambled eggs, then the ham slices, then the remaining provolone cheese. Top with the roll tops.

Using a serrated knife, gently slice through the layered ham and provolone cheese to separate the individual sliders, being careful not to cut all the way through the rolls.

In a small saucepan over medium heat, melt 1/4 cup butter. Stir in the brown sugar and mustard, cooking until the sugar is completely dissolved and the mixture is smooth. (2-3 minutes)

Brush the mustard-butter glaze evenly over the tops of the rolls. Cover the baking dish loosely with aluminum foil and let stand at room temperature. (30 minutes)

Preheat oven to 350 degrees F (175 degrees C). Remove the aluminum foil from the baking dish.

Bake in the preheated oven until the tops are golden brown and the cheese is melted and bubbly. (15-20 minutes)

For extra flavor, consider adding a dash of hot sauce or a sprinkle of red pepper flakes to the egg mixture.
Feel free to substitute other cheeses, such as cheddar, Monterey Jack, or Swiss, based on your preference.
For a crispy bottom, brush the bottom of the rolls with melted butter before layering the ingredients.
These sliders can be assembled ahead of time and stored in the refrigerator for up to 24 hours before baking. Add a few minutes to the baking time if baking from cold.
