Follow The Directions

01

Step

Gather your ingredient. (5 minutes)

02

Step

Gently melt the butter in a double boiler over barely simmering water, ensuring the bottom of the bowl doesn't touch the water. Allow it to melt slowly and evenly. (5-7 minutes)

03

Step

Remove the melted butter from the heat and let it cool slightly. Skim off any foam or milk solids that rise to the top, discarding them to achieve a pure, clarified butter. (10 minutes)

04

Step

Allow the clarified butter to solidify completely in the refrigerator. This process separates the remaining water content from the butterfat. (8 hours, or overnight)

05

Step

Carefully drain off any liquid (water and residual milk solids) that has collected at the bottom of the solidified butter. (2 minutes)

06

Step

Transfer the pure butterfat to a microwave-safe bowl. Gently microwave in short intervals until just melted, being careful not to overheat. (30 seconds - 1 minute)

07

Step

Pour the drawn butter into individual serving bowls and present alongside your steamed crab legs or broiled lobster tails. (2 minutes)

For an extra layer of flavor, consider infusing the butter with aromatics during the melting process. Add a sprig of fresh thyme, a clove of garlic, or a strip of lemon zest to the butter as it melts, then remove before solidifying.
Leftover drawn butter can be stored in an airtight container in the refrigerator for up to a week or frozen for longer storage. Thaw in the refrigerator overnight before reheating.
