Follow The Directions

01

Step
10 mins

In a large pot, combine 1 can of vegetable broth and water. Add the diced potatoes and chopped cabbage. Bring to a boil and cook for 10 minutes, or until the potatoes are tender but still firm.

02

Step
15 mins

In a skillet over medium heat, brown the ground beef until cooked through. Drain any excess grease. Transfer the beef to the pot with the broth and vegetables. Add the diced onion, celery, green bell pepper, and minced garlic to the skillet. Cook until the vegetables are tender, then add them to the pot.

03

Step
2 hrs

Pour the remaining can of vegetable broth and tomato-vegetable juice cocktail into the pot. Stir in the diced tomatoes, frozen mixed vegetables, okra, lima beans, crumbled beef bouillon, Worcestershire sauce, celery seed, and bacon grease. Season with salt and pepper to taste. Bring the soup to a boil, then reduce the heat to low. Simmer for 2 hours, allowing the flavors to meld together beautifully.

For a richer flavor, consider browning the ground beef with a touch of olive oil and a pinch of red pepper flakes.
Feel free to adjust the amount of vegetables to your preference. Carrots, zucchini, or green beans would also be delicious additions.
If you don't have bacon grease on hand, butter or olive oil can be used as a substitute. The bacon grease does add a unique smoky flavor, though.
For a vegetarian version, omit the ground beef and use vegetable bouillon cubes.
