Remove the ginger slices before serving, if desired. Ladle the soup into bowls and serve hot.

For a vegetarian version, substitute vegetable broth for the chicken stock. Consider adding a splash of sesame oil just before serving for added depth of flavor.
If you prefer a spicier soup, add a pinch of red pepper flakes along with the ginger.
Thinly sliced scallions make a lovely garnish.
