Add the chopped onion, minced garlic, and sliced carrots to the same saucepan. Sauté for 3-5 minutes, until the onion becomes translucent and fragrant. (3-5 minutes)

Introduce the broccoli florets, chopped cauliflower, and chopped celery to the pot. Stir in the chopped tomatoes (with their juice), chicken broth, and the reserved chicken. (2 minutes)

Bring the soup to a gentle boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, allowing the flavors to meld together and the vegetables to become tender. (25-30 minutes)

Stir in the chopped fresh spinach and hot pepper sauce. Season with sea salt and freshly ground black pepper to taste. Simmer for another 2-3 minutes, until the spinach wilts. (2-3 minutes)

For a richer flavor, consider browning the chicken in a separate pan before adding it to the soup.
Feel free to customize the vegetables to your liking. Zucchini, bell peppers, or green beans would be excellent additions.
If you prefer a thicker soup, you can mash some of the vegetables with a potato masher or immersion blender before adding the spinach.
Garnish with fresh parsley or a swirl of cream for an elegant presentation.
