Step

In a large pot or Dutch oven, combine the diced potatoes, carrots, celery, onion, 2 teaspoons of salt, and vegetable broth (or water). Bring to a rolling boil over high heat. (Approximately 10 minutes)

While the vegetables are heating, prepare the knipla dough: In a large bowl, whisk together the 5 cups of flour and 1 teaspoon of salt. Add the beaten eggs and 1 1/4 cups of water. Mix until the dough comes together. Turn the dough out onto a lightly floured surface and knead for 3 to 5 minutes, or until smooth and elastic. (Approximately 8 minutes)

Step

Once the soup is boiling, use kitchen shears or a knife to snip or cut small pieces of the dough (knipla) into the simmering soup. Continue until all the dough is used. Boil gently until the knipla rise to the surface and are cooked through, about 5-7 minutes. Then reduce the heat to low and simmer while you prepare the cheese sauce. (Approximately 12 minutes)

Step

In a separate saucepan, melt the butter over medium heat. Whisk in the 1 cup of flour and 2 teaspoons of salt until smooth. Gradually pour in the milk, whisking constantly to prevent lumps. Add the shredded Cheddar cheese and continue to cook, stirring, until the cheese is melted and the sauce is thickened. (Approximately 10 minutes)

Pour the cheese sauce into the soup pot and stir to combine. Simmer gently for an additional 20 minutes, allowing the flavors to meld. Taste and adjust seasoning as needed. Serve hot and enjoy! (Approximately 20 minutes)

For a richer flavor, use chicken broth instead of vegetable broth or water.
Add a pinch of nutmeg to the cheese sauce for a warm, comforting touch.
If you don't have kitchen shears, you can pinch off small pieces of the dough with your fingers.
Garnish with fresh parsley or chives for added freshness.
