Add Cashews: Add cashews to the caramelized sugar mixture and stir quickly to coat evenly. Immediately spread the coated cashews in a single layer on the prepared baking sheet. Let cool completely until hardened (about 20 minutes).

Prepare Raspberry Vinaigrette: In a blender or food processor, puree the thawed raspberries, red wine vinegar, and olive oil until smooth. Strain through a fine-mesh sieve to remove seeds, if desired. Set aside.

Assemble Salad: In a large bowl, combine chopped romaine lettuce, baby spinach, diced pears, dried cherries, and crumbled feta cheese.

For extra flavor, toast the cashews lightly before candying.
If you don't have dried cherries, cranberries or raisins make a great substitute.
Use a high-quality balsamic vinegar for a richer vinaigrette.
To prevent the pears from browning, toss them with a little lemon juice before adding them to the salad.
The candied cashews can be made ahead of time and stored in an airtight container.
