For best results, use fresh, high-quality red snapper fillets. Other types of snapper or firm white fish can also be substituted. Adjust the amount of red pepper flakes to your preference for heat. Toasted cashews add even more flavor! Toast them lightly in a dry pan over medium heat for a few minutes before chopping. Serve with a side of rice or quinoa to soak up the delicious sauce. A squeeze of fresh lime juice just before serving brightens the flavors even more. Make sure to not overcook the fish, the fish will become dry and rubbery.
