In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion and ground lamb. Cook, breaking up the lamb with a spoon, until the lamb is browned and the onions are softened. (Approximately 8-10 minutes)

Add the red pepper flakes, dried basil, cumin, cinnamon, minced garlic, chili powder, dried oregano, cocoa powder, sugar, bay leaf, salt, and pepper to the pot. Stir well to combine the spices and coat the lamb and onions. Cook for 1-2 minutes, allowing the spices to bloom and release their aromas.

Stir in the diced tomatoes with their juice and the red beans with their liquid. Bring the chili to a boil over medium-high heat. (Approximately 5 minutes)

Once boiling, reduce the heat to low, cover the pot, and simmer for at least 15 minutes, or up to an hour, to allow the flavors to meld and deepen. Stir occasionally to prevent sticking. (15-60 minutes)

For a richer flavor, consider using dark chocolate with a high cocoa content instead of cocoa powder.
Icelandic lamb is preferred due to its leanness, but any very lean ground lamb will work well.
Adjust the amount of red pepper flakes to control the level of spiciness.
Serve with your favorite chili toppings, such as shredded cheese, sour cream, or chopped cilantro.
