Follow The Directions

Step

In a 2-quart saucepan, bring the chicken broth to a rolling boil. (2 minutes)

Stir in the quinoa. Reduce heat to low, cover, and simmer until the broth is fully absorbed, approximately 15-20 minutes.

Remove from heat and gently stir in the thawed corn. Cover again and let stand for about 5 minutes, allowing the corn to warm through.

In a large bowl, whisk together the fresh lime juice, red wine vinegar, lime zest, and ground cumin.

Gradually whisk in the avocado oil until the dressing is emulsified.

Add the rinsed and drained black beans, finely chopped red bell pepper, finely chopped red onion, and fresh cilantro to the bowl.

Season generously with salt and freshly ground black pepper to taste.

Gently fold in the cooked quinoa and corn mixture until all ingredients are evenly combined.

For an extra layer of flavor, toast the quinoa in a dry pan for a few minutes before cooking.
Adjust the amount of lime juice and cumin to your preference. A pinch of chili powder can also add a nice kick.
This salad is best served chilled. Allow it to sit in the refrigerator for at least 30 minutes to allow the flavors to meld together.
To make it a complete meal, consider adding grilled chicken, shrimp, or tofu.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
