For an extra layer of flavor, try adding chopped walnuts or pecans to the batter or crumble topping. If your bananas are not ripe enough, you can ripen them quickly by placing them in a paper bag with an apple or a banana for a day or two. To prevent the crumble topping from browning too quickly, tent the loaf pan with foil during the last 15-20 minutes of baking. This banana bread freezes well.
