Pat the chicken thighs dry with paper towels. In a small bowl, combine garlic powder, onion powder, salt, and pepper. Sprinkle the seasoning mixture evenly on both sides of the chicken thighs.

Heat 1 tablespoon of olive oil in a 12-inch nonstick oven-safe skillet over medium heat. Ensure the bottom of the pan is coated evenly. Place the seasoned chicken thighs in the skillet and sear until browned, about 3 minutes per side. Transfer the browned thighs to a plate and set aside.

Add the remaining 1 tablespoon of olive oil to the same skillet. Add the sliced mushrooms and sauté, stirring occasionally, for about 2 minutes. Incorporate the smashed garlic cloves and herbes de Provence; continue to cook and stir for an additional minute until fragrant.

Arrange the mushrooms to one side of the skillet. Place 3 onion rings into the skillet, then top each with a browned chicken thigh. Create space for the remaining onion rings and chicken thighs, nestling them amongst the mushrooms.

Once all onion rings and chicken thighs are in place, redistribute the mushrooms evenly around the skillet. Pour the white wine over the top, then cover the skillet tightly.

Transfer the skillet to the preheated oven and bake until the chicken thighs are cooked through and the juices run clear when pierced with a fork, approximately 15 to 20 minutes. An instant-read thermometer inserted into the center should register at least 165 degrees F (74 degrees C).

Serve each chicken thigh with a slice of the cooked onion and a generous portion of the sautéed mushrooms. Garnish with snipped fresh chives or parsley for a burst of freshness.

For an enhanced depth of flavor, consider marinating the chicken thighs in the seasoning blend for at least 30 minutes before cooking.
If you don't have an oven-safe skillet, you can transfer the chicken and vegetables to a baking dish after searing.
