Create the Dough: Gradually add the reserved water to the dry ingredients, mixing with your hands until a workable dough forms. Add only enough water to bind the ingredients—about 1/2 cup should suffice. (Approximately 5-7 minutes)

Shape the Rotti: Divide the dough into tennis ball-sized portions. (Approximately 3-5 minutes)

Flatten the Dough: On a lightly oiled surface, flatten one portion of dough into a thin, even round. (Approximately 2-3 minutes per rotti)

Cook the Rotti: Heat 2 tablespoons of vegetable oil in a griddle or skillet over medium heat. Carefully place the flattened rotti in the hot oil. (Approximately 1 minute)

Fry to Golden Perfection: Fry the rotti until golden brown on one side, about 30-40 seconds. Flip and continue frying until the other side is equally golden and crisp. (Approximately 1-2 minutes per side)

Repeat and Serve: Repeat the cooking process with the remaining dough, adding 2 tablespoons of oil to the griddle for each rotti. Serve hot with your favorite chutney or pickle.

For a richer flavor, consider adding finely chopped onions or other vegetables like bell peppers to the dough.
Adjust the amount of green chilies according to your spice preference.
If the dough is too dry, add a tablespoon of water at a time until it reaches the desired consistency. If it is too wet, add a tablespoon of rice flour.
Akki Rotti is best served fresh and hot.
