In a large bowl, combine the sliced red onion, yellow onion, salt, minced jalapeno, garlic, coriander, chili powder, turmeric, and cumin. Mix thoroughly to ensure even distribution of spices. Gradually incorporate the chickpea flour and water, stirring until a thick batter forms. Add more water, a tablespoon at a time, if needed to achieve the desired consistency. Allow the mixture to rest for 10 minutes. (Prep time: 15 minutes, Resting time: 10 minutes)

Preheat your air fryer to 350 degrees F (175 degrees C). (Time: 5 minutes)

Lightly coat the air fryer basket with nonstick cooking spray. Spoon approximately 2 tablespoons of the batter into the basket, gently flattening each portion. Repeat, ensuring the bhajis do not touch each other to allow for even cooking. (Time: 5 minutes)

Air fry for 6 minutes, then lightly mist the tops of each bhaji with cooking spray. Flip the bhajis and cook for an additional 6 minutes, or until golden brown and crispy. Transfer the cooked bhajis to a plate lined with paper towels to absorb any excess oil. Repeat with the remaining batter. (Time per batch: 12 minutes)

For extra flavor, try adding a pinch of asafoetida (hing) to the batter.
Adjust the amount of jalapeno based on your spice preference. For a milder bhaji, remove the seeds and membrane completely.
Serve immediately for the best crispy texture. These are also delicious with mint chutney or tamarind chutney.
If you don't have an air fryer, you can bake these in a preheated oven at 375°F (190°C) for approximately 20-25 minutes, flipping halfway through.
