Stir in the dried oregano, sugar, dried basil, crushed rosemary, dried sage, red pepper flakes, salt, and black pepper. Cook, stirring constantly, until fragrant, about 2 minutes.

Pour in the crushed tomato sauce. Stir well to combine all ingredients. Bring the sauce to a gentle simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to 1 hour, stirring occasionally to prevent sticking.

For a smoother sauce, carefully transfer half of the marinara to a blender. Blend until completely smooth. Return the blended sauce to the saucepan and stir to combine with the remaining sauce.

For an even deeper flavor, consider adding a tablespoon of tomato paste along with the crushed tomatoes. It adds richness and umami.
Fresh basil, added at the very end, brings a vibrant brightness to the sauce. Stir in a handful just before serving.
This marinara can be made ahead of time and stored in the refrigerator for up to 3 days, or frozen for longer storage.
Adjust the amount of red pepper flakes to your desired level of spiciness.
If you don't have fresh mushrooms, 4 ounces of drained, canned mushrooms can be substituted.
