Follow The Directions

01

Step
5 mins

Prepare your ingredients: Gather all ingredients and have them measured and ready to go. (5 minutes)

02

Step
2 mins

Combine and heat: In a large, heavy-bottomed pot or Dutch oven, combine the apple cider, orange juice, sugar, lemon juice, and pineapple juice. Stir well to dissolve the sugar. (2 minutes)

03

Step
1 mins

Infuse with spice: Add the crushed cinnamon stick and whole cloves directly to the cider mixture. (1 minute)

04

Step
15 mins

Simmer gently: Place the pot over medium-low heat and bring the mixture to a gentle simmer. Allow it to simmer for at least 15 minutes, or up to an hour, to allow the flavors to meld and deepen. Stir occasionally to prevent sticking. (15-60 minutes)

05

Step
5 mins

Serve with flair: Ladle the warm Wassail into mugs or heat-proof glasses. Garnish with orange slices, cinnamon sticks, or star anise for an extra touch of elegance. (5 minutes)

For a richer flavor, use unfiltered apple cider. The sediment adds depth and complexity.
Adjust the sweetness to your liking by adding more or less sugar. Taste and adjust as it simmers.
Feel free to experiment with other spices such as star anise, cardamom pods, or allspice berries.
For an adult version, add a splash of brandy, rum, or bourbon just before serving.
If you don't have pineapple juice, you can substitute with another citrus juice like grapefruit or mandarin orange.
