Follow The Directions

01

Step
5 mins

In a medium saucepan, combine water, brown sugar, granulated sugar, ginger, peppercorns, allspice, and cinnamon sticks. (5 minutes)

02

Step
35 mins

Bring the mixture to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 30 minutes to allow the flavors to meld. (35 minutes)

03

Step
5 mins

Strain the spiced syrup through a fine-mesh sieve into a heatproof container, discarding the solids. (5 minutes)

04

Step
4 hrs

Cover and refrigerate the syrup overnight, or for at least 4 hours, to chill thoroughly. (240 minutes)

05

Step
5 mins

In a large punch bowl, combine the chilled spiced syrup, vodka, rum, orange juice, and pineapple juice. Stir well to combine. (5 minutes)

06

Step
2 mins

Just before serving, add the crushed ice to the punch bowl. (2 minutes)

07

Step
3 mins

Garnish with lemon slices and serve immediately. (3 minutes)

For a non-alcoholic version, omit the vodka and rum and substitute with sparkling water or ginger ale.
Adjust the sweetness by adding more or less sugar to the spiced syrup, according to your preference.
For a stronger ginger flavor, use more ginger or let the ginger steep in the syrup for a longer time.
If you don't have time to chill the syrup overnight, you can speed up the process by placing it in the freezer for 1-2 hours, but be careful not to let it freeze completely.
Experiment with other fruit juices, such as mango or guava, for a different flavor profile.
