Prepare the Grill: Preheat an outdoor grill for high heat and lightly oil the grate.

Cook the Quinoa: Combine quinoa and water in a saucepan and bring to a boil. Reduce heat to low, place lid on saucepan, and cook until water is completely absorbed, about 15 minutes; Remove from heat and set aside to cool.

Sauté the Vegetables: Heat 2 teaspoons olive oil in a skillet over medium-high heat. Cook and stir carrots, celery, red bell pepper, onion, garlic, ginger, and mushrooms in the hot oil until softened, about 10 minutes; set aside to cool.

Combine Ingredients: Mash kidney beans with a fork in a large bowl; add quinoa and the carrot mixture to the beans and mix.

Season and Form Patties: Mix dill, spinach, egg, bread crumbs, sesame oil, mozzarella cheese, salt, and pepper into kidney bean mixture; shape into 8 patties.

Prepare Patties for Grilling: Brush the 1 tablespoon olive oil evenly both sides of each patty.

Arrange Patties: Arrange the patties into a large baking dish.

Grill the Burgers: Grill on preheated grill until hot in the center, 7 to 8 minutes per side.

For a vegan option, omit the egg and mozzarella cheese. Consider adding a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes) as a binder.
Feel free to experiment with different vegetables! Zucchini, corn, or black beans would make great additions.
These burgers can also be baked in a preheated oven at 375°F (190°C) for about 20-25 minutes, flipping halfway through.
If the mixture is too wet, add more bread crumbs until the patties hold their shape well.
