For a vegan option, substitute the eggs with 2 tablespoons of flaxseed meal mixed with 6 tablespoons of water, and let it sit for 5 minutes to thicken before adding to the mixture. Experiment with different toppings! Avocado, chipotle mayo, or a fresh salsa would all be delicious additions. If the mixture is too wet, add a bit more bread crumbs. If it's too dry, add a tablespoon of water or oil.
