For a richer flavor, use challah or brioche bread. If you don't have time to dry the bread overnight, you can toast it lightly in a low oven (200°F) for about 30 minutes. Feel free to substitute other dried fruits for the raisins, such as cranberries or chopped dates. For a non-alcoholic version, replace the rum with 1/4 cup of apple cider or orange juice. Bread pudding can be assembled ahead of time, covered, and refrigerated for up to 24 hours. Add 10-15 minutes to the baking time if baking from cold.
