For a more intense lime flavor, add a little lime zest along with the juice. A pinch of red pepper flakes can add a subtle kick to this dish. Serve immediately for best flavor and texture.
Bright, vibrant Swiss chard, quickly sauteed and kissed with the zest of lime, makes a delightful and healthy side dish, or a light, refreshing vegetarian main course when served over a bed of fluffy quinoa or rice.
Prepare the Swiss chard: First, wash and dry the chard thoroughly. On a cutting board, separate the stems from the leaves. Chop the stems into 1/4-inch thick pieces. Stack the chard leaves, roll them tightly into a cylinder, and slice crosswise into 1/2-inch ribbons.
Heat a large non-stick skillet over medium heat. Add half the olive oil (1.5 tablespoons).
Add the chopped chard stems to the hot oil and cook, stirring occasionally, until they begin to soften, about 2 minutes.
Add the sliced chard leaves to the skillet with the stems. Cook and stir, allowing the leaves to wilt down slightly, about 3 minutes.
Drizzle the remaining olive oil (1.5 tablespoons) over the chard and stir to coat evenly. Continue cooking, stirring occasionally, until the leaves are tender and fully wilted, about 3-4 minutes.
Remove the skillet from the heat. Immediately sprinkle with kosher salt and squeeze the juice from half a lime over the chard. Stir to distribute the salt and lime juice evenly.
For a more intense lime flavor, add a little lime zest along with the juice. A pinch of red pepper flakes can add a subtle kick to this dish. Serve immediately for best flavor and texture.

Feb 23, 2025The stems take a little longer to cook than the leaves, so cooking them separately is key.
