Drain any excess liquid, reserving the liquid in a measuring cup. Add evaporated milk to the reserved liquid until you have 1/2 cup of liquid total. Set aside.

Create the Creamy Base: In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the flour and cook, stirring constantly, until a smooth paste forms. (Approximately 1-2 minutes). Add the chopped onion and cook until softened and translucent, stirring occasionally. (Approximately 4-5 minutes). Add the minced garlic and cook until fragrant (about 1 minute). Slowly pour in the milk mixture, stirring constantly to prevent lumps from forming.

Incorporate Cheese and Spices: Reduce the heat to low. Stir in the shredded jalapeño Jack cheese, Worcestershire sauce, red pepper flakes, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.

Combine and Bake: Add the cooked spinach to the cheese sauce and stir until well combined. (Approximately 2-3 minutes).

Broil: Preheat your oven's broiler. Transfer the spinach mixture to a greased baking dish. Sprinkle the prepared breadcrumb topping evenly over the spinach. Place the dish under the broiler until the breadcrumbs are golden brown and toasted. (Approximately 3-5 minutes). Watch carefully to prevent burning.

For a richer flavor, use a blend of cheeses such as Gruyere and Parmesan in addition to the jalapeño Jack.
Adjust the amount of red pepper flakes to your desired level of spiciness.
If you don't have evaporated milk, you can substitute with heavy cream or whole milk, but the texture may be slightly different.
Ensure the spinach is thoroughly drained to prevent a watery dish.
The breadcrumb topping can be made ahead of time and stored in an airtight container until ready to use.
