In a saucepan, combine sugar and water. Bring to a boil over medium-high heat. Cook, without stirring but swirling the pan gently as needed, until the sugar melts and transforms into a deep amber caramel. (8-12 minutes)

Carefully stir in the Buffalo sauce and butter into the caramel. Be cautious, as it will bubble and spit. It might initially form a ball. Return the saucepan to heat and bring to a boil, stirring until the caramel is completely dissolved. (3 minutes)

Remove the saucepan from the heat and stir in the baking soda and cayenne pepper.

Carefully pour the spicy caramel mixture over the popcorn. Toss gently but thoroughly to coat each kernel, being mindful of the hot caramel. Spread the coated popcorn evenly onto the prepared baking sheet.

Bake in the preheated oven until the popcorn is dry and crisp. (15-20 minutes)

Let cool for 10 minutes on the baking sheet, then stir to prevent clumping.

For a richer flavor, use brown butter in place of regular butter.
Adjust the amount of cayenne pepper to your preferred level of spiciness.
