Follow The Directions

01

Step

Prepare for baking: Preheat your oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper. Prepare a strainer by lining it with cheesecloth; set aside. (Prep time: 5 minutes)

02

Step

Microwave and drain the cauliflower: Place riced cauliflower in a microwave-safe bowl. Cover and microwave for 3 to 4 minutes until heated through. Transfer to the prepared cheesecloth-lined strainer and let cool for 15 minutes. Once cooled, gather the edges of the cheesecloth, twist tightly, and squeeze out as much moisture as possible. (Cook time: 20 minutes)

03

Step

Combine ingredients: In a large bowl, combine the squeezed cauliflower, egg, ranch mix, and cayenne pepper. Mix thoroughly until well combined. Stir in the Parmesan cheese until evenly incorporated. (Prep time: 5 minutes)

04

Step

Shape the crackers: Use a small cookie scoop to portion the cauliflower mixture onto the prepared baking sheet. Flatten each portion with a small rolling pin, the bottom of a cup, or your hand to a very thin, 1/16-inch thickness. The thinner, the crispier! (Prep time: 15 minutes)

05

Step

Bake to perfection: Bake the crackers in the preheated oven for 10 minutes. Flip each cracker, then continue baking for another 10 minutes, or until golden brown and crisp. (Cook time: 20 minutes)

06

Step

Cool and enjoy: Transfer the baked crackers to a wire rack to cool completely. Once cooled, store in an airtight container to maintain their crispness. (Cool time: 20 minutes)

For an extra cheesy flavor, try using a blend of Parmesan and Pecorino Romano cheese.
Adjust the amount of cayenne pepper to suit your spice preference. A pinch of red pepper flakes can also be added for extra heat.
Ensure the cauliflower is thoroughly drained to achieve maximum crispness. You can even press it between paper towels after squeezing in the cheesecloth.
For a vegan option, substitute the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes to thicken) and use a plant-based Parmesan cheese alternative.
