Sauté until the onions become softened and develop a golden hue, about 5 minutes. Incorporate the drained diced tomatoes and season with salt and pepper. Continue cooking for another 5 minutes. Introduce the plumped raisins, balsamic vinegar, and sugar. Cook, while stirring occasionally, until the sauce thickens to a desirable consistency, approximately 5 minutes. Remove the bay leaves and stir in the julienned basil. Cover to keep warm.

Bring a large pot of lightly salted water to a rolling boil. Introduce the angel hair pasta and cook for 8 to 10 minutes, or until al dente. Drain thoroughly.

While the pasta is cooking, heat the remaining 1 tablespoon of extra virgin olive oil in a skillet over medium heat. Toss the chicken breasts with lemon juice to coat evenly. (Reserve the lemon zest for later use). Cook the chicken on both sides until golden brown and the juices run clear, approximately 15 minutes. Transfer the cooked chicken to a warm plate and allow it to rest for about 5 minutes.

To assemble, slice each chicken breast against the grain into elegant, thin slices. Divide the angel hair pasta into four wide, shallow bowls. Arrange the chicken slices artfully over the pasta, and generously spoon the raisin-tomato sauce over them. Garnish with a sprinkle of lemon zest, shaved Parmesan cheese, and a fresh basil sprig.

For an extra layer of flavor, consider adding a splash of dry white wine to the sauce while it's simmering.
If pine nuts are unavailable, slivered almonds can be used as a substitute.
Ensure the chicken is not overcooked, as it will become dry. Use a meat thermometer to check for an internal temperature of 165°F (74°C).
