For a milder flavor, remove the membranes from the jalapenos before chopping.
For an extra crispy crust, brush the croissants with a beaten egg before baking.
Feel free to experiment with different types of sausage or add other ingredients like shredded cheese or bell peppers to the filling.
These croissants are best served warm, but they can also be enjoyed at room temperature.
To make ahead, assemble the croissants and refrigerate them until ready to bake. Add a few minutes to the baking time if baking from cold.
