For optimal flavor infusion, brine the salmon in the refrigerator for at least 4 hours, or preferably overnight. This allows the fish to fully absorb the complex flavors of the brine. Adjust the heat level by using more or less jalapeño, or by removing the seeds before slicing. This brine can be used for other fish as well, like halibut, or even chicken or pork!
