Prepare the Peppercorns: Place peppercorns in a heavy-duty plastic bag, seal tightly, and, using a rolling pin or mallet, crush them coarsely to release their aromatic oils. (5 minutes)

Combine Brine Ingredients: In a large, non-reactive bowl or container, combine the crushed peppercorns, water, kosher salt, brown sugar, honey, pure maple syrup, white sugar, thinly sliced jalapeño peppers, smashed garlic cloves, and onion powder. (5 minutes)

Dissolve and Infuse: Stir the mixture vigorously until all the sugars and salt have completely dissolved, ensuring a homogenous brine. This step is crucial for even flavor infusion. (10 minutes)

For optimal flavor infusion, brine the salmon in the refrigerator for at least 4 hours, or preferably overnight. This allows the fish to fully absorb the complex flavors of the brine.
Adjust the heat level by using more or less jalapeño, or by removing the seeds before slicing.
This brine can be used for other fish as well, like halibut, or even chicken or pork!
