Follow The Directions

01

Step

Preheat oven to 375 degrees F (190 degrees C). (5 minutes)

02

Step

In a small bowl, whisk together ranch dressing and seafood seasoning. Place rockfish fillets on a rimmed baking sheet lined with parchment paper for easy cleanup. Brush the fish generously with the ranch mixture. (5 minutes)

03

Step

Bake in the preheated oven until the fish is opaque and flakes easily with a fork, approximately 20-25 minutes, depending on the thickness of the fillets. (25 minutes)

04

Step

While the fish is baking, prepare the slaw. In a medium bowl, combine coleslaw mix, sour cream, cilantro, lime juice, cumin, salt, and pepper. Mix well to ensure all ingredients are evenly distributed. Taste and adjust lime juice or seasonings as needed. Cover and refrigerate until ready to assemble the tacos. (10 minutes)

05

Step

Reduce oven temperature to 325 degrees F (165 degrees C). Arrange taco shells on a baking sheet and bake until crisp and lightly golden, about 5-7 minutes. Keep a close eye on them to prevent burning. (7 minutes)

06

Step

Once the rockfish is cooked, gently separate it into bite-sized pieces using a fork. (5 minutes)

07

Step

To assemble the tacos, fill each warm taco shell with a generous amount of the prepared slaw. Top with the flaked rockfish. Serve immediately, with extra lime wedges for squeezing, if desired. (5 minutes)

For an extra layer of flavor, consider adding a drizzle of sriracha mayo or a sprinkle of cotija cheese to the tacos.
Feel free to substitute other types of white fish, such as cod or mahi-mahi, if rockfish is not available.
If you prefer a spicier slaw, add a pinch of cayenne pepper or a dash of your favorite hot sauce.
To prevent the taco shells from breaking, warm them in the oven as directed.
