In a small, microwave-safe bowl, melt the butter in 10-second intervals, stirring in between, until fully melted. Stir in the lemon juice and granulated garlic. Keep warm. (2 minutes)

Trim the dark green parts from the leeks and discard (or reserve for vegetable stock). Trim the roots, leaving the root end intact to hold the leek together. Cut the leeks in half lengthwise and remove any tough outer layers. Thoroughly rinse the leeks under cold water, ensuring to clean between each layer to remove any dirt or grit. (10 minutes)

Arrange the leeks in a large baking dish. Drizzle with olive oil and season generously with sea salt and freshly ground black pepper. Turn the leeks to coat evenly with oil. (3 minutes)

Roast the leeks, cut-side down, for 15 minutes. Turn the leeks so they are cut-side up and continue roasting for 10 more minutes. (25 minutes)

Drizzle the leeks with the prepared lemon butter and roast for an additional 3 to 5 minutes, or until the leeks are tender and slightly caramelized. (5 minutes)

Serve immediately.

For a deeper flavor, try browning the butter before adding the lemon juice and garlic. Watch closely to avoid burning.
If your leeks are particularly large, you may need to increase the roasting time.
A sprinkle of fresh parsley or chives adds a lovely finishing touch.
