Preheat oven to 350 degrees F (175 degrees C). (5 minutes)

Carefully cut a 4-inch circle around the stem of the pumpkin to create a lid. Set the lid aside. Scoop out the seeds and stringy fibers from inside the pumpkin. Place the prepared pumpkin in a 9x13 inch baking dish. (15 minutes)

In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until fork-tender, approximately 15 minutes. Drain well and mash. Season generously with salt, pepper, and garlic powder. Set aside. (20 minutes)

While the potatoes are cooking, brown the ground beef in a large skillet over medium heat until no longer pink. Drain off any excess grease. (10 minutes)

Spoon the browned ground beef into the hollowed-out pumpkin. Pour in the creamed corn and drained whole kernel corn. Top evenly with the mashed potatoes. (5 minutes)

Carefully place the pumpkin lid back on top. Pour about 2 cups of water into the baking dish, around the pumpkin. (2 minutes)

Bake in the preheated oven for 50-60 minutes, or until the pumpkin is tender and can be easily pierced with a fork. (60 minutes)

Let the pumpkin rest for 10 minutes before serving. To serve, bring the entire pumpkin to the table and remove the lid to reveal the surprise inside. Scoop out portions of the filling along with the cooked pumpkin flesh. (10 minutes)

For a richer flavor, sauté a diced onion and some minced garlic with the ground beef.
Consider adding a layer of shredded cheddar cheese between the ground beef and the mashed potatoes for extra cheesy goodness.
If your pumpkin is wobbly, place a few crumpled pieces of aluminum foil around it in the baking dish to stabilize it.
To enhance the pumpkin flavor, sprinkle the inside of the pumpkin with a little brown sugar or maple syrup before filling.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
