Prepare the Potatoes: Place the diced potatoes in a saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer until fork-tender (about 15-20 minutes). Drain well and return to the saucepan. Gently toss over low heat for 1 minute to dry completely. Press the potatoes through a ricer or mash until smooth. Season generously with salt, pepper, and nutmeg. Stir in the butter and egg yolk until well combined. Spread the mixture onto a baking sheet and let cool completely (about 30 minutes).
