Follow The Directions

01

Step
2 hrs 5 mins

In a large, heavy-bottomed pot or Dutch oven, combine the pork, salt, and enough water to cover the meat by about 2 inches. Bring to a boil over high heat, then reduce the heat to low, cover, and gently simmer for 2 hours, skimming off any foam or impurities that rise to the surface. (Total time: 2 hours 5 minutes)

02

Step
20 mins

Remove the pot from the heat. Carefully remove the pork from the pot and set aside to cool slightly. Once cool enough to handle, shred the pork with two forks. (Total time: 20 minutes)

03

Step
45 mins

Return the shredded pork to the pot. Add the hominy and chili powder. Bring the mixture to a simmer over medium heat and cook for 30-45 minutes, stirring occasionally, until the flavors have melded and the broth has thickened slightly. (Total time: 45 minutes)

04

Step
5 mins

Ladle the Posole Soup into bowls. Garnish each bowl with shredded green cabbage, shredded red cabbage, and chopped white onion. Serve immediately with lime wedges, allowing each person to squeeze fresh lime juice to their liking. (Total time: 5 minutes)

For a richer flavor, use pork shoulder (Boston butt) instead of pork loin. This cut has more fat and will result in a more succulent broth.
Feel free to adjust the amount of chili powder to your preferred level of spiciness. You can also add a pinch of cayenne pepper for extra heat.
Other delicious garnish options include chopped cilantro, diced avocado, thinly sliced radishes, and a drizzle of hot sauce.
Posole Soup tastes even better the next day! Store leftovers in an airtight container in the refrigerator for up to 3 days.
