Gently place eggs in a saucepan and cover completely with cold water. (1 minute)

Bring water to a rolling boil for exactly 1 minute. Cover the saucepan, remove it from the heat, and allow the eggs to stand in the hot water for 10-12 minutes. (12 minutes)

Carefully remove the eggs from the hot water and cool them under cold running water until they are cool enough to handle. Peel the eggs. (5 minutes)

Using a sharp knife, score spirals into the whites of the eggs, from top to bottom. This allows the marinade to penetrate more effectively and creates a beautiful visual effect. (5 minutes)

In a small saucepan, heat the vegetable oil over medium heat. Add the crushed garlic and cook until it just begins to turn golden brown, being careful not to burn it. (3 minutes)

Stir in the brown sugar and soy sauce. Remove the pan from the heat. (1 minute)

Place the peeled and scored eggs in the sauce, turning to coat them evenly. Allow the eggs to sit in the sauce, turning occasionally, until they are beautifully dark and the sauce has thickened into a rich, syrupy glaze. This may take anywhere from 15 minutes to an hour, depending on your preference for color and flavor intensity. (15-60 minutes)

Remove the eggs from the sauce and serve immediately. Enjoy them as is, or alongside a crisp, refreshing salad.

For a richer flavor, use dark soy sauce instead of regular soy sauce.
A touch of grated ginger added to the garlic as it cooks adds a wonderful aromatic dimension.
If you prefer a less sweet glaze, reduce the amount of brown sugar.
The marinade can be reused. Store it in the refrigerator for up to a week and use it to marinate more eggs or as a glaze for grilled chicken or tofu.
