Heat 1 tablespoon sesame oil in a large frying pan or wok over medium heat. Add garlic and 1/3 of the basil. Sauté until garlic is fragrant, about 30 seconds. Add onion and cook until translucent, about 5-7 minutes.

Add chicken to the pan with remaining sesame oil and season with chili powder. Add mushrooms and bamboo shoots. Cook until the chicken is mostly cooked and the mushrooms have softened, about 4-5 minutes. Stir in the red curry paste until fragrant, about 1 minute.

Pour in half of the coconut milk. Stir until vegetables and chicken are evenly coated. Add peanut butter and curry powder and mix thoroughly. Cook over medium heat, stirring frequently to prevent sticking, until the sauce begins to thicken, about 10-15 minutes.

Reduce heat to low and add the remaining coconut milk and brown sugar. Continue to simmer over low heat, stirring occasionally, until the sauce reaches your desired consistency and the flavors have melded, about 10-15 minutes more. Taste and adjust seasoning, adding more peanut butter, brown sugar, or chili powder as needed. Garnish with the remaining basil before serving.

For a spicier dish, add a pinch of red pepper flakes or a finely chopped chili pepper along with the garlic.
If you don't have bamboo shoots, water chestnuts make a great substitute.
Feel free to add other vegetables like bell peppers, snap peas, or carrots.
