For an extra layer of flavor, try adding a pinch of dried oregano or a clove of minced garlic to the marinade. If you don't have Vidalia onions, any sweet onion variety will work well. You can also use red onion, but soak it in ice water for 10 minutes to mellow its flavor. The salad is best served the same day it's made, but leftovers can be stored in the refrigerator for up to 24 hours. The vegetables may soften slightly.
