Cover the bowl tightly with plastic wrap or a lid. Refrigerate for at least 2 hours, or preferably 4 hours, allowing the flavors to meld and intensify. The longer it marinates, the more flavorful it becomes. (240 minutes)

Just before serving, drain off any excess liquid. This prevents the curtida from becoming soggy. (2 minutes)

Serve chilled as a refreshing topping for tacos, grilled meats, fish, or alongside your favorite Latin-inspired dishes.

For a spicier kick, add a pinch of red pepper flakes to the vinegar mixture.
If you prefer a milder onion flavor, soak the sliced red onion in ice water for 15 minutes before adding it to the curtida. This helps to reduce its sharpness.
Curtida is best served fresh. While it can be stored in the refrigerator for up to 2 days, the vegetables will lose some of their crispness over time.
