In a large skillet, heat over medium-high heat. Add ground beef, ground lamb, onion, pine nuts, cinnamon, salt, and black pepper. Cook, stirring frequently, until the meat is browned and crumbly (approximately 8-10 minutes). Drain any excess grease.

Stir in lemon juice and taste. Adjust seasonings as needed. Allow the meat mixture to cool completely (approximately 15-20 minutes).

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet or line with parchment paper (approximately 5 minutes).

Roll out thawed puff pastry sheets to about 1/8 inch thickness. Use a 3-inch round cookie cutter to cut out at least 9 rounds per sheet. Lightly brush the inside edges of each round with water. Place about 2 teaspoons of the cooled meat filling into the center of each round. Fold the pastry in half to cover the filling, creating a half-moon shape. Seal the edges tightly. Transfer the pies to the prepared baking sheet. Repeat with the remaining dough and filling (approximately 20-25 minutes).

Brush each pie with beaten egg. Bake in the preheated oven until golden brown, approximately 15 to 20 minutes.

For an extra layer of flavor, consider adding a pinch of allspice or a dash of paprika to the meat mixture.
If you're feeling adventurous, you can make your own dough from scratch!
These pies are best served warm, but they can also be enjoyed at room temperature.
