Follow The Directions

01

Step

Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper. (5 minutes)

02

Step

In a large bowl, cream together the butter and 3/4 cup sugar until light and fluffy using an electric mixer. Beat in the egg, lemon juice, lemon zest, and vanilla extract. (7 minutes)

03

Step

Gradually add the flour, poppy seeds, and salt, mixing until just combined. Be careful not to overmix. The dough should come together without any floury streaks. (5 minutes)

04

Step

Pinch off 1 1/2 teaspoon-sized pieces of dough and roll them into small balls. Place the balls onto the prepared baking sheets, leaving a little space between each. (10 minutes)

05

Step

Use your thumb to gently press down on each ball, creating a small indentation in the center. (3 minutes)

06

Step

Bake in the preheated oven until the edges are firm, about 7 minutes. Remove from the oven and use the back of a spoon to reinforce each indent. Return to the oven and continue baking until the cookies are barely golden around the edges, about 5 minutes more. (12 minutes)

07

Step

Transfer the cookies to a wire rack and allow them to cool completely. (20 minutes)

08

Step

In a medium bowl, mix together the cream cheese, sour cream, and 2 1/2 tablespoons sugar until smooth and well blended. (5 minutes)

09

Step

Spoon 1/2 teaspoon of the cream cheese mixture into each cooled cookie indent. (8 minutes)

10

Step

Using a sharp paring knife, make 4 deep cuts along the bottom third of each strawberry. Gently fan out the cuts to create the first row of petals. Repeat this process, cutting in between the cuts from the row below, until you reach the top of the strawberry, forming a rose. (25 minutes)

11

Step

Place a strawberry rose over the cream cheese filling on each cookie. Tuck 1 or 2 fresh mint leaves around each strawberry for a touch of green. (7 minutes)

For a richer flavor, use browned butter in the cookie dough.
If the dough is too sticky, chill it for 30 minutes before rolling.
The strawberry roses are best made just before serving to prevent them from wilting.
A sprinkle of powdered sugar adds a lovely finishing touch.
