Prepare the Onion: Place the diced red onion in a medium bowl, cover with cold water, and stir in the sea salt. Soak for 30 minutes to mellow the onion's sharpness. (Time: 30 minutes)

Drain the Onion: Drain the soaked onion thoroughly in a colander for at least 10 minutes to remove excess water. (Time: 10 minutes)

Combine Ingredients: In a large bowl, gently combine the drained onion, diced tomatoes, cucumber, cilantro, and jalapeno pepper.

Add Avocado and Season: Add the diced avocado to the bowl. Squeeze fresh lime juice over the salad, then season with salt and freshly ground black pepper to taste. Gently toss to combine, being careful not to mash the avocado.

Serve: Serve immediately for the freshest flavor. Kachumbari is best enjoyed soon after preparation.

For a milder flavor, remove the seeds and membranes from the jalapeno pepper. Adjust the amount of jalapeno to your spice preference.
If you want to make this dish ahead, hold the avocado and add just before serving to prevent browning.
Leftovers can be blended into a refreshing gazpacho. Add a little water or tomato juice to reach your desired consistency.
For a richer flavor, add a drizzle of olive oil.
