Step

In a shallow dish, whisk together the flour, salt, and pepper. Dredge each chicken breast thoroughly in the flour mixture, ensuring both sides are evenly coated. (Prep time: 5 minutes)

Turn on your Instant Pot® and select the 'Saute' function. Once the pot is hot, add the olive oil. Carefully place the dredged chicken breasts in the pot, ensuring they are not overcrowded. Cook until lightly browned on one side, about 3 minutes. Flip the chicken and add the sliced mushrooms. Continue to cook, stirring the mushrooms occasionally, until the other side of the chicken is lightly browned and the mushrooms have softened, about 3 more minutes.

Pour the Marsala wine around the chicken, being careful not to wash off too much of the flour coating. Close and lock the Instant Pot® lid, ensuring the valve is set to 'Sealing.' Select the 'Pressure Cook' or 'Manual' function and set the cooking time to 5 minutes. Once the cooking cycle is complete, allow for a natural pressure release for 10 minutes, then carefully perform a quick release of any remaining pressure.

Carefully remove the chicken breasts from the Instant Pot® and transfer them to a serving platter. Set aside and keep warm.

Turn off the 'Saute' function. Add the butter to the pot with the remaining sauce. Stir the butter into the sauce until it is fully melted and the sauce is smooth and emulsified. (about 2 minutes).

Pour the luscious Marsala sauce generously over the chicken breasts on the serving platter. Serve immediately and enjoy!

For a richer flavor, consider using a higher quality Marsala wine. Sweet Marsala can also be used, but it will result in a sweeter sauce.
If you prefer a thicker sauce, you can whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry. Stir the slurry into the sauce during the last minute of cooking on 'Saute' mode.
Serve this Chicken Marsala with a side of mashed potatoes, pasta, or rice to soak up all that delicious sauce. A side of steamed green beans or asparagus also makes a wonderful accompaniment.
