Soften the rice paper: Dip one rice wrapper into the water, ensuring it's fully submerged. Soak for about 15-20 seconds, or until pliable and easy to bend. Be careful not to oversoak, as it will become too sticky and difficult to work with. (1 minute)

Assemble the spring roll: Carefully remove the softened rice paper from the water and lay it flat on your prepared surface. (30 seconds)

Add the filling: In a line across the center of the wrapper, arrange a small handful of romaine lettuce leaves, a few slices of chicken, and a few slices of red bell pepper. Leave about 2 inches of space uncovered on both sides of the filling. (2 minutes)

Roll it up: Fold the uncovered sides of the wrapper inward, over the filling. Then, tightly roll the wrapper from the end with the lettuce towards the other end, like you're making a burrito. (1 minute)

Repeat: Continue steps 2-5 with the remaining rice wrappers and filling ingredients. (20 minutes)

Serve: Cut each spring roll in half diagonally and arrange them on a serving platter. Serve immediately with extra Caesar dressing for dipping. (5 minutes)

For a vegetarian option, substitute the chicken with grilled tofu or chickpeas.
Feel free to add other vegetables like shredded carrots, cucumber, or avocado.
If the rice paper sticks to your work surface, lightly dampen the surface with water.
Make sure the chicken is not too hot when adding as this can cause the rice paper to tear.
Prepare the chicken ahead of time to save on the work required just before serving.
Add a sprinkle of parmesan cheese for extra flavor.
