Once boiling, remove the pot from the heat and allow the brine to cool completely to room temperature. This is crucial for food safety. (Approximately 2-3 hours)

Submerge the turkey completely in the cooled brine. Ensure the entire bird is submerged. If necessary, use a weight (like a plate or sealed bag of ice) to keep it submerged.

Refrigerate the turkey in the brine for at least 8 hours, or up to 16 hours for optimal flavor penetration. (8-16 hours)

Remove the turkey from the brine and discard the brine. Rinse the turkey thoroughly inside and out with cold water. Pat the turkey dry with paper towels before roasting.

For a more intense flavor, lightly crush the peppercorns and allspice berries before adding them to the brine.
Ensure the turkey is completely thawed before brining. A partially frozen turkey will not brine evenly.
Adjust brining time based on the size of your turkey. A smaller bird may only need 8 hours, while a larger bird can benefit from 16 hours.
After brining, pat the turkey extremely dry before roasting. This will promote crispy skin.
