Rinse the garbanzo beans and soybeans thoroughly. Place them in a pressure cooker along with the bay leaf and quartered onion. Add vegetable broth and enough water to cover the beans by 1 inch (or follow the manufacturer's instructions for the minimum amount of liquid required).

Seal the lid of the pressure cooker and bring the pressure up to high. Once at high pressure, reduce the heat to low and cook for 1 hour, maintaining the high pressure. Afterward, allow the pressure to drop naturally.

Drain the beans, reserving the cooking liquid. Transfer the beans to a food processor. Add the crushed garlic, lemon juice, soy sauce, black pepper to taste, and tahini. Process until the mixture is smooth and creamy. For a thinner consistency, gradually add some of the reserved cooking liquid until you achieve your desired texture.

Scoop the hummus into a serving bowl and gently fold in the chopped fresh parsley. Serve immediately or chill for later enjoyment.

For a smoother hummus, peel the skins off the garbanzo beans after cooking.
