For extra crispy bacon, place a wire rack on top of the baking sheet before arranging the bacon. This allows hot air to circulate around each slice. Don't discard the rendered bacon grease! Strain it through a fine-mesh sieve and store it in the refrigerator for up to a month. Use it to sauté vegetables, fry eggs, or add flavor to soups and sauces. For a smoky flavor, try using applewood-smoked or hickory-smoked bacon. Adjust baking time based on bacon thickness. Thicker bacon requires longer baking time.
