Season the chuck roast generously with salt and freshly ground black pepper.

Heat a large, heavy-bottomed skillet over medium-high heat. Sear the roast on all sides until deeply browned, approximately 4 minutes per side. Transfer the seared roast to a slow cooker.

Pour the reduced-sodium beef stock into the skillet, bringing it to a simmer while scraping up any flavorful browned bits from the bottom of the pan with a wooden spoon. Pour the beef stock and chopped onions over the roast in the slow cooker. Cover and cook on low heat for 5 hours.

Add the cubed potatoes, chopped carrots, and chopped celery and parsley to the slow cooker. Cover and continue to cook on low heat until the roast is incredibly tender and easily shreds with a fork, approximately 3 additional hours.

For an even richer flavor, consider adding a tablespoon of tomato paste to the skillet when deglazing with beef stock.
Adjust the amount of vegetables to your preference. Other root vegetables like parsnips or turnips would also be delicious.
If you prefer a thicker gravy, whisk a tablespoon of cornstarch with two tablespoons of cold water and stir into the slow cooker during the last 30 minutes of cooking.
